INGREDIENTS
- 2 tbsp beetroot houmous https://www.jasonclark.online/beetroot-houmous/
- 1 bagel
- 1/2 cup shredded red cabbage
- 3 slices of tomato
- 3 slices of cucumber
- small hand full of mixed salad leaves
Method
- Slice the bagel in half and lightly toast on both sides
- Butter both sides of the bagel
- Place the salad leaves on the bottom half of the bagel
- Spoon the houmous on top and spread evenly
- Top with cabbage, cucumber and tomato
- Season with salt and cracked pepper and put the other half of the bagel on top
