
Ingredients
2 slices of your favorite bread (I used a brown seeded loaf)
mature cheddar cheese
1 tsp whole grain mustard
butter
1 or 2 tsp diced onion
sliced ham
4 or 5 slices of pickled gherkins
Method
Butter both slices of the bread (note: the buttered side will be on the outside of the sandwich)
Slice enough cheese to cover one slice of bread and place on to the un-buttered side
Spread the mustard over the cheese, sprinkle on the onion, then place on the gherkin and sliced ham
Put the second slice of bread on top making sure the buttered side is on the outside of the sandwich
Put a non stick pan on a low to medium heat
When the pan has warmed up gentle place the sandwich in the pan and cook for 2 to 3 mins or till golden brown (This is best done on a low heat to give the cheese a chance to melt)
Carefully flip the sandwich on to the other side and gently press the sandwich down with the back of a spatula. Cook for a further two to three minutes.
Remove the sandwich from the pan then cut the sandwich on the diagonal and serve
