SMOKED SALMON LINGUINE WITH GARLIC, CHILLI AND LEMON

Ingredients
  • 275g linguine
  • 1 tbsp olive oil
  • 3 red Birdseye chillies finely sliced
  • 2 large cloves of garlic
  • 180g pack smoked salmon
  • zest 1 lemon and juice to taste
  • 4 finely chopped spring onions (small to medium sized)
  • 1 tbsp finely chopped fresh dill
Directions
  • Step 1 Method
  • Step 2 1. Cook the linguine for 10 mins or following pack instructions until al dente.
  • Step 3 2. Meanwhile, heat the oil in a wok or large frying pan and briefly fry the chilli and garlic.
  • Step 4 3. Using pasta tongs remove linguine from water and toss with garlic and chilli oil adding a little of the pasta water.
  • Step 5 4. Add the salmon, lemon zest, dill and onions and toss till thoroughly mixed.
  • Step 6 5. Serve with a little grated Parmesan.
