SMOKED SALMON LINGUINE WITH GARLIC, CHILLI AND LEMON

Ingredients
- 275g linguine
- 1 tbsp olive oil
- 3 red Birdseye chillies finely sliced
- 2 large cloves of garlic
- 180g pack smoked salmon
- zest 1 lemon and juice to taste
- 4 finely chopped spring onions (small to medium sized)
- 1 tbsp finely chopped fresh dill

1. Cook the linguine for 10 mins or following pack instructions until al dente.

2. Meanwhile, heat the oil in a wok or large frying pan and briefly fry the chilli and garlic.

3. Using pasta tongs remove linguine from water and toss with garlic and chilli oil adding a little of the pasta water.

4. Add the salmon, lemon zest, dill and onions and toss till thoroughly mixed.

5. Serve with a little grated Parmesan.
