Nacho Cheese Sauce

Ingredients
- 50 g Butter
- 50 g Plain Flour
- 250 ml Whole Milk
- 150 g Cheese – a good melty cheese works best. American cheese gives the smoothest texture, cheddar adds stronger flavour.
- 25 ml Pickled Jalapeno Juice
- 4 to 8 Finely Diced Pickled Jalapenos
- Salt and Pepper to Season

Step 1
Heat a small pot or saucepan over medium heat and melt the butter. -
Step 2
Stir in the flour and cook for 2–3 minutes to form a roux. -
Step 3
Slowly stir in the milk and bring to a gentle simmer. -
Step 4
Reduce the heat to medium-low, then add the cheese a little at a time, stirring until fully melted. -
Step 5
Stir in the pickled jalapeno juice and diced jalapenos. Continue stirring until the sauce is smooth. -
Step 6
Season to taste – the cheese and jalapeno brine already add saltiness.
